Fast & Furious Bruschetta

You''ll need...
- – 5 oz cups Cantaré
Fresh Roasted Vine Tomatoes
2 - 7 oz tubs Cantaré Traditional Olive Tapenade
1 cup fresh basil leaves
4 tablespoons extra virgin olive oil
6 cloves garlic, peeled
Kosher salt and freshly ground black pepper
2 large French baguettes, sliced 1-inch thick (about 36 slices)
1 1/2 lbs of Cantaré Fresh Mozzarella Cheese, sliced
1/4-inch thick – Ovoline or Sofficella preferred
Here's how...
- Preheat oven to 450 degrees F. On a baking
sheet, line up baguette slices and drizzle
with olive oil. Toast in oven for about three
minutes or until crisp & golden brown.
Rub the garlic on the toasted side of each
slice and then lay a slice of mozzarella
cheese on top. Place crostini back in oven
and melt cheese slightly, about one minute.
Remove from oven. Top each crostini with
a teaspoon of olive tapenade, basil leaf
and two pieces of fresh roasted vine tomatoes.
Season to taste with salt and black pepper.
